nutty dried berry granola

once you’ve eaten homemade granola, you won’t be able to stomach the too-sweet stuff from the store.   mine doesn’t use butter, is high in protein, and loaded with berries.   we eat it  with homemade yogurt.

preheat the oven to 325.

9 cups old-fashioned oats
1 1/2 cups flaked coconut
3/4 cup quinoa
3/4 cup flax seed meal
1/2 cup black sesame seeds
2 1/2 cups slivered almonds
1/2 cup chopped walnuts
1 1/2 cups chopped pecans
1 cup chopped pistachios
1/2 cup raw sunflower seeds
1 1/2 teaspoons ground cinnamon
1 1/4 cup maple syrup
1 1/4 cup walnut oil
2 teaspoons vanilla extract
3 cups dried berries (i use strawberries and blueberries that i dry during their season, but you could substitute or include dried sour cherries, golden raisins or cranberries)

in a large bowl, thoroughly combine the oats with the other grains, seeds, nuts and cinnamon.

separately, whisk together the syrup, oil and vanilla.   add the wet ingredients to the dry and stir to evenly coat.

bake 30 – 40 minutes on cookie sheets, stirring and rotating the pans every 10 minutes.    you want to toast the granola to golden — but not brown it…   watch it carefully — it scorches quickly.

spread the hot granola on a counter or table.   it will dry as it cools.  when it is dry, stir in the dried berries and store in air-tight containers.  serve with yogurt.
